(2 lb) Lean Ground Beef
(2 tbsp) Olive oil
(1/2 cup) Onion, chopped
(1/2 cup) Bacon
(1 clove) Garlic, chopped
(1 tbsp) Thyme
(1/4 cup) Breadcrumbs
(1 egg) Egg
(1/2 cup) Grated mozzarella
(1/2 cup) Grated cheddar
Directions
- Fry onion in olive oil until soft. Then add bacon and garlic. Cook until browned and then leave to cool.
- In a large bowl, combine ground beef, thyme, breadcrumbs, egg, onion mixture, and season with salt/pepper. Mix well.
- Split the ground beef into even chunks (about seven), and set aside. Combine the cheeses together. Then, place a ball of cheese inside each of the hamburger patties.
- Cook on the barbeque or smoker as you would a regular burger. (We cooked them for 20 minutes per side on a smoker set to 300) Be sure to put tinfoil underneath to catch the cheese!
