Little bites of coconut and peppermint with chocolate on top for a special treat!

Ingredients
(1 cup) unsweetened, shredded coconut
(2 Tbsp) honey
(2 Tbsp) coconut oil
(1/2 tsp) peppermint extract
(1/2 to 2/3 cup) dark chocolate, chopped
Directions
- Melt together coconut oil and honey. Mix coconut, oil and honey and peppermint extract in a food processor. Scoop out 1 teaspoon to 1 tablespoon of the mixture (depending on how large you want them) and roll into balls, then flatten slightly on a cookie sheet covered in parchment. Place in the freezer for about 10 minutes to harden.
- Melt the chocolate, then remove patties from freezer and pour/spread chocolate over the tops of each one (you could also dip them if you're feeling ambitious, but I find topping them is plenty of chocolate). Put back in freezer to harden. Store in freezer or fridge until ready to eat (if frozen, leave out for a bit so they soften before serving).
- Makes 8-12 patties, depending on size.
